Camera Critters and Scrumptious Sunday


As I was driving to my nieces home last week, I took the wrong country road, again. So I thought as long as I was there I'd stop and take a picture of these guys! They were laying out in the pasture so calmly and close to the fence.

Happy Mother's Day

Stuffed Pork Chops
4 thick cut pork chops
filling:
2 apples, cored and chopped
1/2 C raisins
3/4 C bread crumbs
1 T brown sugar
1/2 t salt
12 t pepper
1/2 t cloves
2 T melted butter
2 T chopped chives
2 T butter
1 C beef Broth
Trim fat from chops. Make a slit in thick end of chop. In a bowl, combine apples, raisins, bread crumbs, brown sugar, pepper, salt, and cloves. Add 2 T melted butter and chives. Mix well. Stuff each chop with filling. Pin closed with a toothpick.
Heat 2 T butte in skillet. Brown chops slowly over medium heat on both sides. Add beef broth and bring to a simmer over low heat for about 30 minutes or until tender. Cover with lid if broth does not cover chops. Remove toothpicks, put on serving platter, pour pan juice over chops, and serve.
